Na podstawie uzyskanych wyników stwierdzono, że jony Fe(II), użyte jako katalizator w procesie utleniania, spowodowały największy przyrost grup karboksylowych i aldehydowych w użytych skrobiach oraz przyczyniły się do znacznego zmniejszenia (ok. 60%) zawartości amylozy.
Basing on obtained results, it was concluded, that Fe(II) ions employed as catalyst in starch oxidation process caused the highest increase of carboxylic and aldehyde groups used in the investigated starch and drastically decreased amount of amylose content (about 60%).
